Spinach with soya nuggets

The moment I give a non vegetarian recipe I start feeling guilty thinking of my vegetarian friends and start raking my brains of a vegetarian dish which is equally delicious and nutritious. This one is could easily be the star of your dinner party or lunch menu. Spinach with soya nuggets – both highly nutritious and makes a wholesome meal for anyone.

Ingredients (serves 3 to 4)

Spinach – 250 gms or 1 bunch
Soya nuggets – 1 cup
Garlic – 4 to 5 cloves
Green chillies - 2 to 3 or as per your taste
Onion – 1 (finely chopped)
Butter – 2 tbsp (optional)
Cheese – 2 tbsp (grated)
Oil – 3 to 4 tbsp
Salt – as per taste

Method

1. Clean and boil the spinach leaves for 2 to 3 mins. Immediately drain the water and let the spinach leaves cool for some time.

2. In the meantime soak the soya nuggets in adequate water.

3. Grind the spinach leaves along with garlic cloves and green chillies to a fine paste.

4.Heat oil in a pan and add onions. Saute till they turn soft. Squeeze out all the water from the nuggets and add the nuggets to the pan. Saute for some time.

5.Now add the spinach paste in the pan and mix with the nuggets. Add butter at this point but butter is optional, do not add if you don’t want to. Add salt as per taste.

6. Saute till oil starts to separate from sides. Take it off heat and garnish with grated cheese.

The melting cheese on top of the spinach adds a new dimension to this dish. Serve hot with rice or roti.
