Spicy noodles with soyabean nuggets

I find noodles such a versatile element that you can make so many things with it. Just a few ingredients put together and you can feed a crowd within minutes. I put soyabean nuggets as it is good source of protein and a healthy vegetarian option but one can use shredded chicken, pork or eggs or tofu if you want.

Ingredients (serves 3 to 4)

Boiled wheat noodles – 1 pkt
Carrot – ½ cup juliennes
Capsicum – ½ cup juliennes
Onion – ½ cup juliennes
Beans -1/2 cup juliennes
Garlic - 1 tsp (chopped finely)
Ginger – ½ tsp (chopped finely)
Soyabean nuggets – 1 cup
Dark Soya sauce – 3 tbsp
Vinegar – 1 tbsp
Red chilli powder – 1 tsp or as per taste
Sugar – 1 tsp
Salt – as per taste
Black pepper powder – ½ tsp
MSG powder – a pinch
Oil – 4 tbsp

Method

1.Soak the soyabean nuggets in warm water for 10 mins.

2.Heat 3 tbsp oil in a kadai or wok. Add chopped garlic and ginger and fry till they turn golden brown. Now add all the vegetables and saute in high heat.

3.Squeeze out all the excess water from the soyabean nuggets and add the nuggets to the vegetables in the wok.

4.Now add 2 tbsp soya sauce and sugar to the vegetables and fry for 2 mins .Add vinegar, red chilli powder and salt to it.

5.Now add the boiled noodles and ensure that the noodles are well coated with the vegetables. Add the remaining soya sauce, black pepper powder and MSG. Check if you need to add little salt to the noodles.

6.At this stage you can add another spoon of oil to the noodles and do a quick stir and take it off heat.
