Chilli Garlic and me

Greek styled Baked chicken

This recipe is inspired from my trip to the Aegean islands..sun,water and the wonderful people all around. This is not an authentic greek recipe but once you start cooking the aroma of the mediterranean spices transport you to the seaside taverns. If you have the ingredients in your cupboard it will hardly take anytime to assemble.

Ingredients (serves 2 to 3)

Chicken - 500gms (cut into pieces)
Garlic paste - 1/2 tsp
Yoghurt - 2 to 3 tbsp
Red chilli powder - 1tsp or as per taste
Gyros spice mix - 1tsp (if you don't have it mix dry oregano,sweet paprika, garlic powder, parsley)
Lemon - 1
Onion - 1 ( cut into juliennes and fried)
salt - as per taste
Olive oil - 2 to 3 tsp

Method

1. Clean and dry chicken pieces.
2. In a shallow baking dish place the chicken pieces and then rub the yoghurt,salt and all the spices on the chicken.
3.Scatter the fried onions over the marinated chicken and drizzle olive oil on top of it before putting it in the oven.
4.Cut the lemon into rings and place it on the chicken.Bake for an hour at 220 degree till all the juices dry up.

Serve it hot with rice or salad.

Soma... you can do this in the microwave in convection mode.
