Turai (Ivy Gourd) with eggs

I had earlier shared with you the recipe of turai with mixed nuts and coconut. Today I am going to share another recipe with turai, this time with eggs.. this is also a wow dish and this has also sneaked out from my mom’s kitchen.

Ingredients (serves 3 to 4)

Turai – 250 gms
Eggs – 2
Onion – 1 (chopped finely)
Ginger- 1 tsp (chopped finely)
Garlic – 1 ½ tsp (chopped finely)
Red chilli powder – 1 tsp
Turmeric powder – ½ tsp
Coriander powder – ½ tsp
Salt – as per taste
Sugar – a pinch
Nigella seeds – a pinch
Oil - 2 to 3 tbsp

Method

1.Wash and peel the rough edges of the gourd or turai. Cut it in half; lengthwise and then thinly slice the halves.

2.Heat oil in a kadai and add nigella seeds to it. Now add the turai and saute till the water almost dries up. Add the chopped garlic, ginger and onion to the turai.

3.Add the turmeric powder, sugar, salt, red chilli powder, coriander powder to the turai. Saute till the oil starts to separate.

4.Beat both the eggs and add to the turai. Put the heat on low and saute till the eggs gets the scrambled eggs look and is mixed well with the turai.

5.Take it off heat and serve hot with rice or roti.
