Bread and butter pudding ( Pudina)

Never throw away stale bread.. this is what I learnt when I saw this recipe at Food Safari. This is a Maltese recipe and is another version of the bread and butter pudding. You will find all the ingredients in your kitchen and no beating, no fluffing required. Interesting thing is that, though this recipe is known as bread and butter pudding but no butter is used in this recipe.

Ingredients

Bread – 1 loaf
Sugar – 1 ½ cup
Custard powder – 2 tbsp
Corn flour – 2 tbsp
Eggs – 2
Cocoa powder – 1/3 rd cup
Vanilla essence - 1 tsp
Mixed nuts – ½ cup
Glazed cherries – a handful (for garnish)

Method

Tear the bread into small pieces and soak the bread in water for some time. Squeeze out all the water and place the mashed bread in a bowl.

2. Now add the rest of the ingredients except the cherries to the mashed bread and mix well with a spatula or hand beater.

3. Grease a cake tin with oil and flour and pour the bread mixture into the tin.

4. Bake at 180 degree for 40 mins or till the skewer comes out clean.

Serve it hot or at room temperature
